Steaks are simple enough to be prepared by pretty much anyone, ranging from professional chefs to first-time kitchen adventurers. It’s funny how some of the best dishes can often be made in the simplest of ways, with the use of very few ingredients. One such dish is a New York strip steak.
If you’ve never made one before, rest assured that it’s very quick and easy — provided you learn a few basic steps.
Restaurant-grade steaks are not reserved solely for your nights out. You don’t need to pay extra for something that you can prepare with a serving of good meat and a few ingredients found in most homes. It also helps to have a good cast iron skillet, but not having one won’t mean that you have to head to a bar or a restaurant. There are ways around that, too.

What do you need to prepare a strip steak?
Before we get to discuss all the different methods, you need to make sure that you’ve got all the ingredients ready at home. A steak is as delicious as it is easy to prepare, so there’s not a whole lot that you’ll need to get before you start cooking.
The type of meat that you pick plays the biggest part in the success of your meal. Different types of beef are suited to different dishes, and not every cut is going to suit a steak. As the main method of preparing a steak is called pan-searing, you will want a cut that is suited precisely to that.
What type of meat do you need for a steak?
Pan-searing favors boneless cuts that cook rather quickly. The NY strip slice should be no more than one and a half-inch thick, and preferably with a generous amount of fat. There are some recipes that call for slow-cooking cuts, such as beef stew or roast beef. However, to cook a good steak, go with our recommendation.
What else do you need for a NY steak?
Cook your steak with the following ingredients
- 2 NY strip steaks (1-1.5″ thick, about 12 oz each)
- salt and pepper (you can also use kosher salt; black pepper is recommended; you will need more than 1 teaspoon of each)
- fresh thyme (optional) or other herbs
You can also add your own seasonings, such as store-bought steak seasoning, garlic, or marjoram. However, make sure not to overdo it — you don’t want the seasoning to cover up the natural taste of the steak.

How do you cook a New York strip steak on top of the stove?
Preparing steak in a pan on top of the stove is the most popular and fail-proof method out there. For this method, you should preferably have a cast-iron pan, but another type will also do.
When it comes to preparing strip steaks, many people use the pan-searing technique briefly mentioned above. It’s fail-proof and makes delicious, well-made, crispy steaks. There are some variants to the method that we will describe in our steps below.
Let the steaks sit for 30 minutes
Before you begin cooking, take your steaks out of the fridge and let them thaw for around 30-40 minutes. Once that time passes, pat the steaks dry with clean paper towels. This will help speed up the cooking process, as it removes moisture, which has to evaporate before the meat starts browning.
Season your steaks
Add generous helpings of salt and pepper (or kosher salt and pepper) on both sides of the steaks, making sure to season evenly with a rather thick layer. This will then stick to the surface of the steak and turn into a mouth-watering crust.
If you’re using any additional type of seasoning, now is the time to also apply it. Check first to make sure that it doesn’t have an additional helping of salt and/or pepper. You don’t want to overdo it.
Prepare the pan
Turn on your exhaust fan if you have one — it really helps! Next, grab a cast-iron pan or a stainless steel pan. These pans are the best for cooking steaks because they can withstand high heat. The pan should be rather spacious: you don’t want the steaks to be too close together.
Heat up your pan over medium-high heat for a few minutes. It has to be really hot before you place your steaks in the pan. After a while, add oil to the pan. You want to cover the entire pan with a thin layer of oil.
Once the oil begins to shimmer after 2-3 minutes, set your steaks down into the pan. Be VERY careful when you do this and make sure you do it facing away from you because oil splatters can be highly dangerous.
Cook your steaks
For the next few moments (anywhere between 3 and 5 minutes), just leave the steaks to cook. Do not flip them over; simply allow them to reach the desired temperature in the sizzling oil. This will help them develop a brown, crispy crust.
You can flip the steaks over once they release easily without sticking to the bottom of the pan. The underside of the steaks should have a deep brown color at this point.
Once you’ve flipped them over, keep cooking them for another 3 to 4 minutes on the bottom side. This should help you make a rare or medium-rare steak. This whole process should only take about 10 minutes.
Finish up with butter
If you’ve only got about a minute left on your cooking timer, add a tablespoon of butter to the pan. You can also add some fresh thyme, marjoram, or another type of herb. This isn’t a required step, but it adds a lot of flavor to the steaks.
Serve the steaks
The cooking process should now be over! If you’re going to be eating the steaks uncut, all you need to do is transfer them to a plate. If you’re cutting them into slices, move them to a cutting board and leave them to rest for 10 minutes. Make sure you cover them with aluminum foil. Once that time has passed, you can slice them thinly by going against the grain.

How do you make a NY steak tender?
The pan-searing method described above is ideal for cooking a very tender steak. You’re going to be able to enjoy a nice crust thanks to cooking the steak in high heat, but the inside will remain tender, flavorful, and moist.

If you want to take some extra steps to ensure that your steak comes out tender, here are a few tips:
- Use a meat thermometer to prevent overcooking. You want to reach 145 degrees Fahrenheit for a medium-rare steak, 160 degrees for medium, and lastly, 170 degrees for well-done.
- Remember to let the steak rest for, at the very least, 3 minutes before serving.
